Ingredients

  • All-purpose flour: 2 cups (250 g)
  • Baking powder: 1 tbsp
  • Baking soda: 1/2 tsp
  • Salt: 1/2 tsp
  • Smoked paprika: 1/2 tsp
  • Cayenne pepper: 1/2 tsp
  • Crushed Flamin Hot corn chips or cheese puffs: 1/2 cup (30 g) plus 1/4 cup (15 g) for topping
  • Unsalted butter, cold and cubed: 1/2 cup (115 g)
  • Sharp cheddar cheese, grated: 1 cup (120 g)
  • Buttermilk, cold: 3/4 cup (180 ml)
  • Melted butter (for brushing): 2 tbsp
  • Popsicle sticks or wooden skewers: 16

Instructions

Prepare oven and tray:
Preheat oven to 425°F (220°C). Line baking sheet with parchment paper.
Mix dry ingredients:
Whisk flour, baking powder, baking soda, salt, smoked paprika, cayenne, and 1/2 cup crushed Flamin Hot chips in a large bowl.
Cut in butter:
Add cold cubed butter. Cut in with pastry cutter or fingers until mixture becomes coarse crumbs.
Add cheese:
Stir in grated cheddar cheese.
Mix wet ingredients:
Pour in cold buttermilk. Mix gently until a soft dough forms (do not overmix).
Shape dough:
Turn dough onto a floured surface. Pat to 3/4-inch (2 cm) thickness.
Cut biscuits:
Cut into 16 squares or rounds.
Add sticks:
Insert a popsicle stick gently into each piece.
Top and bake:
Place pops on baking sheet. Brush with melted butter, sprinkle with extra crushed Flamin Hot chips.
Bake:
Bake for 12 to 15 minutes, until golden and puffed.
Cool & serve:
Cool slightly before serving.
