- Preheat oven to 425°F. Line a baking sheet with parchment paper.
- In a large mixing bowl, whisk together all-purpose flour, baking powder, baking soda, salt, smoked paprika, cayenne pepper, and 1/2 cup crushed Flamin Hot corn chips.
- Add cold cubed butter and quickly cut it into the dry mixture using a pastry cutter or fork until the mixture resembles coarse crumbs.
- Stir in grated sharp cheddar cheese until evenly distributed.
- Pour cold buttermilk into the bowl and mix gently just until a soft dough forms, taking care not to overmix.
- Turn the dough onto a floured surface and pat it out to approximately 3/4-inch thickness. Cut into 16 equal squares or rounds.
- Carefully insert a popsicle stick or wooden skewer into each dough piece, supporting it to avoid breakage.
- Arrange biscuit pops on the prepared sheet. Brush each with melted butter and sprinkle with extra crushed Flamin Hot corn chips.
- Bake in preheated oven for 12 to 15 minutes, or until golden and puffed.
- Remove from oven and allow pops to cool briefly on a cooling rack before serving.
