Ingredients

  • Refrigerated pizza dough: 1 lb (450 g)
  • Olive oil: 1 tbsp, plus extra for brushing
  • Garlic powder: 1/2 tsp
  • Dried Italian herbs: 1/2 tsp
  • Onion: 1 medium, diced
  • Garlic cloves: 2, minced
  • Lean ground beef or turkey: 1 lb (450 g)
  • Salt: 1 tsp
  • Black pepper: 1/2 tsp
  • Dried oregano: 1 tsp
  • Crushed red pepper flakes (optional): 1/2 tsp
  • Crushed tomatoes: 1 can (14 oz/400 g)
  • Diced tomatoes: 1 can (14 oz/400 g)
  • Low-sodium chicken or vegetable broth: 4 cups (1 L)
  • Lasagna noodles: 6 uncooked, broken into pieces
  • Mozzarella cheese: 1 cup (100 g), shredded
  • Parmesan cheese: 1/2 cup (50 g), grated
  • Ricotta cheese: 1/2 cup (120 g)
  • Fresh basil: 2 tbsp chopped, plus extra for garnish

Instructions

Prepare the Pizza Crust Bowls:
Preheat oven to 400°F (200°C). Divide dough into 4 pieces, roll into balls, flatten into 6-inch (15 cm) circles. Lightly oil outside of 4 oven-safe bowls, drape dough over bowls, brush with oil and sprinkle with garlic powder and Italian herbs. Place bowls upside down on a baking sheet and bake for 15 to 18 minutes until golden. Cool a bit, then gently remove pizza crust bowls.
Soup Base:
Heat 1 tbsp olive oil in a large pot over medium. Add onion and sauté 3 to 4 minutes, then add garlic and cook 1 minute more. Add meat, salt, pepper, oregano, and red chili flakes. Brown meat, breaking it up, for about 5 to 6 minutes.
Simmer and Finish:
Stir in tomatoes and broth, bring to simmer. Add broken lasagna noodles, cook 10 to 12 minutes, stirring, until tender. Mix in mozzarella, Parmesan, and basil. Adjust seasoning. Ladle soup into pizza crust bowls, top with a dollop of ricotta and more basil. Serve hot.

How to Make

Step 01
