09 - 1 teaspoon Dijon mustard
10 - 1/2 teaspoon ground nutmeg
11 - 1 teaspoon dried sage or 1 tablespoon fresh, finely chopped
12 - Salt and freshly ground black pepper, to taste

13 - 2 tablespoons toasted pumpkin seeds

# How to Make:

01 - Bring a large pot of salted water to a boil. Cook pasta until al dente according to package instructions. Drain, reserving 1/2 cup of cooking water, and set pasta aside.
02 - Heat olive oil in a large skillet over medium heat. Add diced onion and cook 3 to 4 minutes until soft and translucent.
03 - Incorporate minced garlic and sauté for 1 minute until fragrant.
04 - Stir in pumpkin purée, plant-based milk, nutritional yeast, lemon juice, Dijon mustard, ground nutmeg, and sage. Season with salt and pepper.
05 - Allow sauce to simmer gently for 5 to 7 minutes, stirring occasionally until thickened. Adjust consistency by gradually adding reserved pasta water as needed.
06 - Add cooked pasta to skillet and toss thoroughly to coat. Heat together for 1 to 2 minutes to meld flavors.
