# How to Make:
- Heat olive oil in a large skillet over medium-high heat. Add diced sweet potatoes and cook, stirring occasionally, for about 8 minutes until slightly browned and starting to soften.
- Add chopped onion, red bell pepper, and minced garlic to the skillet. Sauté for 3 to 4 minutes until vegetables are softened.
- Add ground beef, breaking it up with a spatula. Cook until browned and no longer pink, about 6 minutes. Drain excess fat if necessary.
- Stir in tomato paste, ketchup, yellow mustard, Worcestershire sauce, smoked paprika, dried oregano, salt, and black pepper. Mix thoroughly to combine all ingredients.
- Reduce heat to medium-low. Cover the skillet and cook for 10 minutes, stirring occasionally, until sweet potatoes are tender.
- Sprinkle shredded cheddar cheese evenly over the skillet. Cover and cook for an additional 2 to 3 minutes until the cheese is melted.
- Optionally garnish with diced pickles and sliced green onions before serving hot.
