# What You Need:
→ Vegetables
01 - 2 medium zucchinis
→ Coating
02 - 2 large eggs
03 - 1 tablespoon whole milk
04 - 1 cup panko breadcrumbs
05 - 1/2 cup grated Parmesan cheese
06 - 1 teaspoon dried Italian herbs
07 - 1/2 teaspoon garlic powder
08 - 1/2 teaspoon kosher salt
09 - 1/4 teaspoon ground black pepper
→ For Serving (optional)
10 - Marinara sauce or ranch dressing
# How to Make:
01 - Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper or lightly grease the surface.
02 - Wash and trim both ends of the zucchinis. Slice each zucchini into sticks approximately 1/2 x 3 inches in size.
03 - In a shallow mixing bowl, whisk together the eggs and whole milk until well blended.
04 - In a separate bowl, toss together panko breadcrumbs, grated Parmesan cheese, dried Italian herbs, garlic powder, salt, and black pepper until fully incorporated.
05 - Dip each zucchini stick first in the egg mixture, ensuring full coverage. Transfer to the breadcrumb mixture, pressing gently to adhere coating evenly.
06 - Place breaded zucchini sticks in a single layer on the prepared baking sheet, spacing apart for even crisping.
07 - Bake in the preheated oven for 20 minutes, flipping halfway through, until golden brown and crisp. For extra crunch, broil for an additional 2 minutes if desired.
08 - Enjoy warm, accompanied by marinara sauce or ranch dressing as a dip.
