# What You Need:

→ Chipotle Lime Shrimp

01 - 1 pound large shrimp, peeled and deveined

16 - 2 tablespoons fresh lime juice (about 1 lime)
17 - 1/2 cup fresh cilantro, chopped

# How to Make:

01 - Combine olive oil, lime juice, chipotle peppers, garlic, honey, cumin, smoked paprika, salt, and black pepper in a large bowl. Add shrimp and toss to coat evenly. Cover and refrigerate for 15 to 30 minutes.
02 - Rinse rice under cold water until water runs clear. Heat olive oil in a saucepan over medium heat. Add rice and stir for 1 to 2 minutes.
03 - Add water or broth and salt to saucepan. Bring to a boil, reduce heat to low, cover, and simmer for 15 minutes or until rice is tender and liquid is absorbed. Remove from heat, fluff with a fork, then stir in lime zest, lime juice, and chopped cilantro.
04 - Preheat grill or grill pan to medium-high heat. Thread marinated shrimp onto skewers.
05 - Grill shrimp for 2 to 3 minutes per side until opaque and lightly charred.
06 - Serve grilled shrimp atop cilantro lime rice. Garnish with lime wedges and additional cilantro if desired.
