01 - 2 packs buldak (Korean spicy chicken) instant ramen, noodles and sauce packets separated
02 - 240 ml heavy cream
03 - 3 large egg yolks
04 - 50 g grated Parmesan cheese
05 - 60 ml whole milk
06 - 14 g unsalted butter

07 - 120 g pancetta or bacon, diced

09 - 60 g shredded mozzarella cheese
10 - Freshly ground black pepper, to taste

# How to Make:

01 - Preheat the oven to 400°F (200°C) and grease an 8-inch (20 cm) baking dish.
02 - Bring a pot of water to a boil and cook ramen noodles for 2 minutes less than the package instructions. Drain and set aside.
03 - In a skillet over medium heat, cook diced pancetta or bacon until golden and crisp. Add butter, stir until melted, then remove from heat.
04 - In a large bowl, whisk together heavy cream, egg yolks, grated Parmesan, whole milk, and buldak sauce packets, adjusting the spice to preference.
05 - Add cooked noodles and pancetta mixture into the sauce bowl. Toss thoroughly to coat noodles evenly.
06 - Transfer the combined mixture into the prepared baking dish and evenly sprinkle shredded mozzarella on top. Bake uncovered for 15 to 18 minutes until cheese is bubbly and golden.
07 - Remove from oven and garnish with sliced green onions, freshly ground black pepper, and toasted sesame seeds if desired. Serve immediately.
