- Preheat the oven to 350°F. Line a baking sheet with parchment paper.
- In a medium bowl, whisk together flour, baking powder, ground cinnamon, and salt until evenly blended.
- In a large bowl, use an electric mixer to beat butter and sugar until light and fluffy. Incorporate eggs one at a time, followed by vanilla extract.
- Gradually add the dry mixture into the wet mixture, mixing until just combined.
- Gently fold in chopped dried apples and caramel candies, ensuring even distribution.
- Divide dough in half. On the prepared baking sheet, shape each half into a log approximately 12 inches long and 2 inches wide. Flatten slightly.
- Bake for 25 minutes, or until lightly golden. Remove from oven and allow logs to cool for 10 minutes. Reduce oven temperature to 325°F.
- Using a serrated knife, slice logs diagonally into 3/4-inch-thick pieces. Arrange cut side down on baking sheet.
- Bake for 12 minutes, flip each piece, and bake an additional 8–10 minutes, until crisp and thoroughly dried. Cool completely on wire rack.
- If desired, drizzle cooled dunkers with caramel sauce before serving.
